TEXEL® NatuRed LT is a freeze-dried maturation starter especially designed for color development and stability as well as flavor development in meat applications. This starter culture has high nitrate reductase activity at standard/low processing temperature and offers very slow acidifying speed and slow acidifying power. Designed for color and flavor development, this blend produces high color intensity and stability, as well as very aromatic taste and flavor.

Carrier: dextrose
USED TO MAKE: This meat maturation culture is ideal for the production of naturally cured cooked meat (ham, frankfurter, etc). Suitable for use with nitrite, nitrate or natural curing solutions.
USAGE RATE: 10g to inoculate 100kg of meat mixture
