Description

TEXEL® SA-301 is a freeze-dried maturation starter especially developed for texturizing, coloring, and flavoring. This starter culture provides medium acidifying speed and power with typical color intensity and good color stability. In addition to producing aromatic taste and flavor, this culture offers inhibition of contamination microflora through competitive exclusion. This culture requires addition of fermentable sugars (dexrose, saccharose, etc.). Its acidification activity largely depends on temperature, heating time and the recipe used. Acidification speed and final pH can be adjusted by controlling these parameters.

USED TO MAKE: This meat maturation culture is ideal for the production of dried, fermented, cured meats, ie: small to large caliber dry sausages salamis, chorizos, etc.
