Description

TEXEL® SPP-581 is a freeze-dried maturation starter especially developed for texturizing, coloring, and flavoring. This starter culture offers very fast acidifying speed and very high acidifying power. This blend produces high color intensity and stability, as well as aromatic taste and flavor. In addition, thanks to competitive exclusion and metabolic activities it helps to reduce the incidence of Listeria through fermentation. This culture requires addition of fermentable sugars (dextrose, saccharose, etc). Its acidification activity largely depends on temperature, fermentation time and the recipe used.
