Cheese Color double-strength contains annatto extract in water and potassium hydroxide. Annatto is the common name for the colorant used in cheesemaking. Annatto is derived from the seeds of the annatto tree, Bixa orellana. Annatto has been used as a colorant for foods, cosmetics, medicinal products and textiles. For the past 100 years in Europe and North America, it has been used to color butter, fats and cheese. Today, annatto is used in many food products in addition to dairy products. All ingredients in this cheese color meet Food Chemicals Codex specifications. Color strength may degrade over time due to pigment oxidation -- adjust usage for optimum results. Store in cool, dry, dark place.

USED TO MAKE: Any cheese where yellow-orange color is desired.

USAGE RATE: Mix thoroughly before use, as pigment may settle during storage. Use 1/8 to 1/2 ounce of double-strength cheese color per 1,000 lbs. of milk according to the season of the year and shade desired. Dilute cheese color with 20 times the volume of water and stir it into milk before adding coagulant.
