Kosher-approved calf lipase providing mild "picante" flavor characteristics for Mozzarella, Asiago, Provolone, Feta, Blue. Due to manufacturing process, this enzyme does not contain animal tissue and may be used to produce kosher cheese (and whey). This enzyme is not irradiated and may be used for organic cheese as well (contact your certifier).

USED TO MAKE: Mozzarella, Asiago, Provolone, Feta, Blue
USAGE RATE: We recommend individual experimentation when using lipase with your milk to achieve desired effect. Please consult Dairy Connection technical support for starting points for your application.
